Tex-Mex Chicken & Rice Bake

Got 5 minutes?  That's all you need to put together this tasty, picante-spiked dish.  Then just pop it in the oven, and in less than an hour, you'll have a cheesy, family-friendly dish.

1 can (10 3/4 ounces) Campbell's® Condensed Cream of Chicken Soup (Regular or 98% Fat Free)

1 cup Pace® Picante Sauce  

1/2 cup water

1 cup whole kernel corn

3/4 cup uncooked regular long-grain white rice

4 skinless, boneless chicken breast halves  (about 1 pound)

Paprika

1/2 cup shredded Cheddar cheese

  • Stir the soup, picante sauce, water, corn and rice in a 2-quart shallow baking dish.  Top with the chicken.  Sprinkle with the paprika. Cover the baking dish.
  • Bake at 375°F. for 45 minutes or until the chicken is cooked through and the rice is tender.  Sprinkle with the cheese.  Let stand until the cheese is melted.

RECIPE TIPS

  • Flavor Variation: for Picante Chicken & Rice Bake, use 1 jar (16 ounces) Pace® Picante Sauce and omit the soup.  Proceed as directed above.

    Yummy and a hit with the family. I changed the rice to one cup and this worked just fine. We had torilla chips and sour cream on the side. We will definitely make this again.

    My rice did not cook at all. I don't know what I did wrong. The chicken was fully cooked, but the rice was raw and crunchy. I ended up scooping all of the rice out of the pan, and adding 1/2 cup of water and boiling on the stovetop in a pot for 10 min to cook the rice. I can't figure out what I did wrong.%0d%0a%0d%0aThe meal was delicious though. Very filling.%0d%0a%0d%0aAlso, if the website makers are reading this. I absolutely HATE that this meal is nutritionally portioned into 6 portions, when you are clearly making it for 4 people (ie. Use 4 chicken breasts). I guess we are supposed to tell people, "wait a minute, you need to give 1/3 of your chicken to someone else". I found this recipe by searching for meals under 350 calories per serving. I guess that is how they made it fit. Not that it isn't good and healthy, I just wish that they could put the actual calories that a normal person would eat by having this meal.

    My whole family loved this. I tried 1/2 cup of salsa Verde and 1/2 cup of salsa it was good. This was a big hit with the family too.
